Breakfast Recipe- Broccoli Tofu Stir Fry

Ingredients:

  • 1 block of firm tofu, drained and cut into small cubes
  • 1 head of broccoli, cut into florets
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • 2 tablespoons of vegetable oil
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions:

  1. In a small bowl, whisk together the soy sauce, sesame oil, and cornstarch. Set aside.
  2. Heat a large skillet or wok over high heat. Add the vegetable oil and swirl to coat the pan.
  3. Add the cubed tofu to the skillet and stir-fry for 2-3 minutes, until lightly browned. Use a slotted spoon to transfer the tofu to a plate and set aside.
  4. Add the broccoli florets to the same skillet and stir-fry for 2-3 minutes, until tender-crisp. If the skillet becomes too dry, add a splash of water to help steam the broccoli.
  5. Add the minced garlic and ginger to the skillet and stir-fry for 30 seconds, until fragrant.
  6. Return the tofu to the skillet and pour in the soy sauce mixture. Stir-fry for another 1-2 minutes, until the sauce has thickened and everything is well coated.
  7. Season with salt and pepper to taste.
  8. Serve the stir-fry over cooked rice.
