Ingredients:
- 9 lasagna noodles
- 1 pound (about 450g) Italian sausage, casings removed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 1 (15-ounce) container ricotta cheese
- 1 egg
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 (24-ounce) jar marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to the package instructions. Drain and set aside.
In a large skillet over medium heat, cook the Italian sausage until browned. Add chopped onions and garlic, and sauté until the onions are soft and translucent. Drain any excess grease.
In a large mixing bowl, combine the thawed and drained spinach, ricotta cheese, egg, 2 cups of mozzarella cheese, and 1/2 cup of Parmesan cheese. Mix well. Season with salt, pepper, dried oregano, and dried basil.
In a 9x13-inch baking dish, spread a thin layer of marinara sauce to coat the bottom.
Place three lasagna noodles on top of the sauce.
Spread half of the spinach and cheese mixture over the noodles.
Add half of the sausage and onion mixture on top of the cheese layer.
Repeat the layers with three more lasagna noodles, the remaining spinach and cheese mixture, and the remaining sausage and onion mixture.
Place the final three lasagna noodles on top and cover with the remaining marinara sauce.
Sprinkle the remaining mozzarella and Parmesan cheese on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Allow the lasagna to cool for about 10 minutes before slicing and serving.
