These Tofu Summer Rolls are a fresh and healthy dish, perfect for a light meal or appetizer. They are easy to make and can be customized with your favorite vegetables. Here’s how to prepare them.

#### Ingredients

- **8 round rice paper wrappers**
- **½ block extra firm tofu** (about 6-7 ounces), sliced into strips
- **1 tablespoon low sodium soy sauce or tamari**
- **½ tablespoon sesame oil**
- **½ tablespoon honey** (or maple syrup for vegan)
- **1 pinch salt**
- **1 pinch pepper**
- **1 teaspoon garlic powder**
- **2 cups thinly sliced carrots**
- **2 cups thinly sliced purple cabbage**
- **1 avocado**, sliced
- **1 cup fresh cilantro leaves**

**For the Peanut Dipping Sauce:**

- **¼ cup creamy natural peanut butter**
- **1 tablespoon sesame oil**
- **2 tablespoons low sodium soy sauce or tamari**
- **1 tablespoon rice wine vinegar**
- **Cold water** (to thin)
- **1 teaspoon ginger powder**
- **1 teaspoon garlic powder**
- **Salt and pepper to taste**

#### Instructions

1. **Prepare the Tofu:**
   - Pat the tofu dry with paper towels to remove excess moisture. Slice it into strips.
   - In a bowl, combine the tofu strips with soy sauce, sesame oil, honey, salt, pepper, and garlic powder. Mix gently until the tofu is well coated.
   - Cook the tofu in an air fryer at 375°F for about 15-20 minutes, flipping halfway through until crispy. Alternatively, bake in an oven preheated to 400°F for 30-35 minutes.

2. **Make the Dipping Sauce:**
   - In a small bowl, whisk together peanut butter, sesame oil, soy sauce, rice wine vinegar, ginger powder, garlic powder, salt, and pepper. Add cold water gradually until you reach your desired consistency.

3. **Assemble the Summer Rolls:**
   - Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 5 seconds until it becomes pliable but not overly soft.
   - Lay the wrapper on a clean surface. Place a few pieces of cooked tofu, some carrot slices, cabbage, avocado slices, and cilantro leaves just below the center of the wrapper.
   - Fold the sides inward over the filling, then roll from the bottom up tightly to enclose the filling completely. Repeat this process with the remaining wrappers and filling.

4. **Serve:**
   - Arrange the summer rolls on a plate and serve with the peanut dipping sauce on the side.
