#### Ingredients


- **2 medium sweet potatoes**, peeled and cubed

- **1 can (15 oz) black beans**, rinsed and drained

- **1/2 cup corn** (fresh or frozen)

- **1 small red onion**, diced

- **2 cloves garlic**, minced

- **1 teaspoon chili powder**

- **1/2 teaspoon cumin**

- **1/4 teaspoon smoked paprika**

- **Salt and pepper to taste**

- **4-6 tortillas** (gluten-free if needed)

- **1 1/2 cups shredded vegan cheese** (optional)

- **Olive oil** for cooking

- **Salsa, guacamole, or cashew queso** for serving


#### Instructions


1. **Cook the Sweet Potatoes:**

   - Place the cubed sweet potatoes in a pot, cover with water, and bring to a boil. Cook until fork-tender, about 10-15 minutes. Drain and mash them in a bowl.


2. **Sauté the Vegetables:**

   - In a skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and corn, cooking for an additional 2-3 minutes.


3. **Combine Fillings:**

   - In the bowl with the mashed sweet potatoes, add the sautéed onion mixture, black beans, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.


4. **Assemble the Quesadillas:**

   - Heat a non-stick skillet over medium heat. Place a tortilla in the skillet and spoon about 1/2 cup of the filling onto one half of the tortilla. If using, sprinkle with vegan cheese before folding the tortilla over.


5. **Cook Quesadillas:**

   - Cook for 2-3 minutes on each side until golden brown and crispy. Repeat with remaining tortillas and filling.
