WHIPPED FETA
- 8 ounces crumbled feta
- 1/ 2 cup olive oil
- 1/ 4 cup whipped cream cheese
- 1/ 4 cup water
- Lemon zest
- 1 tablespoon oregano
- 2 tablespoons honey
POTATOES
- 10 yukon potatoes
- 1/ 4 cup olive oil
- 1 teaspoon salt & pepper
- 1 teaspoon paprika
METHOD
STEP 1
Preheat oven to 400F degrees. Line large baking sheet with parchment paper. Bring large pot of salted water to boil. Cut potatoes into wedges and add to boiling water for 6-7 minutes. Place potatoes on baking sheet and top with olive oil, salt, pepper & paprika. Mix together and bake for 30-32 minutes until potatoes are crispy. Make sure to flip half way.
STEP 2
Add all ingredients for whipped feta to food processor. Process for 1 minute until smooth. Once mixture is combined, add to bowl and set aside. Remove potato wedges from oven.
STEP 3
Add whipped feta to a bowl and top with potato wedges. Drizzle with olive oil and top with oregano. Serve and enjoy!
