Avocado, Bacon and Egg Toasts with Hot Honey

 


Ingredients:

  • 2 ripe avocados
  • 4 slices of whole-grain bread
  • 4 large eggs
  • 8 slices of crispy bacon
  • Hot honey (store-bought or homemade)
  • Salt and black pepper to taste
  • Optional: Red pepper flakes for added heat
  • Fresh chives for garnish

Directions:

  1. Prepare the Avocado:

    • Mash the ripe avocados in a bowl. Season with salt and pepper to taste. Set aside.
  2. Cook the Bacon:

    • In a skillet over medium heat, cook the bacon until crispy. Once done, transfer to a plate lined with paper towels to drain excess oil.
  3. Poach the Eggs:

    • Poach the eggs to your desired level of doneness. If you're not familiar with poaching, you can also fry or boil the eggs according to your preference.
  4. Toast the Bread:

  7. Top with Poached Eggs:

    • Carefully place a poached egg on each toast, ensuring the yolk remains runny.
  8. Drizzle with Hot Honey:

    • Drizzle a generous amount of hot honey over the entire creation. Adjust the quantity based on your spice preference.
  9. Season and Garnish:

    • Sprinkle a pinch of salt and black pepper over the toasts. If you enjoy extra heat, add red pepper flakes. Garnish with fresh chives for a burst of color and flavor.
  10. Serve Immediately:
