Sticky Rice Cake with Red Bean Paste

  • 2 cups glutinous rice flour
  • 1 cup water
  • 1 cup sugar
  • 1 cup sweet red bean paste
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • Sesame seeds for garnish

Directions:

  1. Prepare the Batter:

    • In a mixing bowl, combine glutinous rice flour, water, sugar, vegetable oil, and vanilla extract. Mix until smooth.
  2. Steam the Batter:

    • Pour the batter into a greased, heatproof dish. Steam over high heat for 20-25 minutes or until the batter becomes firm.
  3. Cool and Cut:

    • Let the steamed batter cool completely. Once cooled, cut it into small squares or rectangles.
  4. Fill with Red Bean Paste:

    • Take each cut piece and make an indentation in the center. Spoon a small amount of sweet red bean paste into the indentation.
  5. Seal and Shape:

    • Fold the edges of the cut piece over the red bean paste, sealing it within the sticky rice cake. Shape it into a neat, compact rectangle.
  6. Garnish:

    • Optionally, you can roll the sticky rice cake in sesame seeds for a delightful crunch and added flavor.
  7. Serve and Enjoy:

    • Your Sticky Rice Cake with Red Bean Paste is ready to be served. Enjoy these delicious treats with a cup of hot tea!

Tips:

  • Ensure the batter is well-mixed to avoid lumps in the sticky rice cake.
  • Adjust the sugar quantity based on your sweetness preference.
  • Experiment with different shapes for a visually appealing presentation.
  • Steam the batter until it's just firm, as it will continue to set as it cools.
