Spinach Mushroom Orzo

 


Ingredients:

- 1 cup orzo pasta

- 2 tablespoons olive oil

- 1 medium onion, finely chopped

- 3 cloves garlic, minced

- 200 grams (about 2 cups) mushrooms, sliced (cremini, button, or a mix)

- 4 cups fresh spinach, roughly chopped

- 1/2 cup grated Parmesan cheese

- 1/4 cup heavy cream (optional, for a creamier texture)

- 2 cups vegetable or chicken broth

- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

- Salt and black pepper to taste

- Fresh parsley, chopped (for garnish)

- Lemon wedges (optional, for serving)


#### Instructions:


1. **Cook the Orzo:**

   - Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.


2. **Sauté the Vegetables:**

   - In a large skillet or pan, heat the olive oil over medium heat.

   - Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

   - Add the minced garlic and cook for another 1-2 minutes, until fragrant.

   - Add the sliced mushrooms to the pan and cook until they release their moisture and become golden brown, about 5-7 minutes.


3. **Combine Ingredients:**

   - Add the cooked orzo to the skillet with the sautéed vegetables.

   - Pour in the vegetable or chicken broth and stir well. Let it simmer for about 5 minutes, allowing the orzo to absorb some of the broth.

   - Stir in the chopped spinach and cook until wilted, about 2-3 minutes.


4. **Add Cheese and Cream:**

   - If using, stir in the heavy cream for a richer texture.

   - Add the grated Parmesan cheese and stir until melted and well combined.

   - Season with red pepper flakes, salt, and black pepper to taste.


5. **Serve:**

   - Garnish with freshly chopped parsley and serve with lemon wedges on the side, if desired.
