- **1 tablespoon ginger-garlic paste**

- **4 medium tomatoes**, pureed

- **15 cashews**, soaked in water for 15 minutes

- **1 teaspoon Kashmiri red chili powder** (for color)

- **½ teaspoon turmeric powder**

- **1 teaspoon garam masala**

- **Salt**, to taste

- **1 cup water** (adjust for desired consistency)

  

### For the Paneer

- **250 grams paneer**, cubed

- **2 tablespoons fresh cream**

- **1 tablespoon kasuri methi** (dried fenugreek leaves), crushed

- **Fresh cilantro**, chopped (for garnish)


## Instructions


### Step 1: Prepare the Gravy

1. In a large pan, heat the oil and 2 tablespoons of butter over medium heat.

2. Add the bay leaf, cardamoms, cloves, and cinnamon stick. Sauté for about 30 seconds until fragrant.

3. Add the chopped onions and cook until they turn golden brown, about 5–7 minutes.

4. Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.

5. Add the pureed tomatoes and soaked cashews. Cook this mixture until the oil starts to separate from the gravy, around 10 minutes.

6. Mix in the Kashmiri red chili powder, turmeric powder, and salt. Cook for another minute.


### Step 2: Blend the Gravy

1. Allow the mixture to cool slightly, then transfer it to a blender and blend until smooth. Return it to the pan.


### Step 3: Cook the Paneer

1. Add water to achieve your desired gravy consistency and bring it to a simmer.

2. Gently add the paneer cubes and cook for about 5 minutes to allow them to soak up the flavors.

3. Stir in the garam masala, kasuri methi, and remaining butter for richness.

4. Finish with fresh cream, mixing gently.
