  • 12 oz (340 g) spaghetti or linguine
  • 4 tbsp unsalted butter

  • 1/3 cup fresh parsley, chopped

  • 1/2 cup reserved pasta water
  • Salt & black pepper, to taste
  • Zest of 1/2 lemon (optional)
Instructions
  1. Bring a large pot of salted water to a boil. Cook pasta until just shy of al dente. Reserve 1/2 cup pasta water, then drain.
  2. While pasta cooks, melt butter with olive oil in a large skillet over medium-low heat.
  3. Add garlic and red pepper flakes. Cook 1–2 minutes, stirring often, until pale gold and fragrant — don't let it brown.
  4. Add the drained pasta to the skillet with a splash of reserved pasta water. Toss over medium heat until glossy.
  5. Stir in parsley, basil, and thyme, tossing until evenly distributed.
  6. Off heat, stir in Parmesan, adding more pasta water as needed for a silky sauce. Season with salt and pepper.
  7. Finish with lemon zest and an extra sprinkle of Parmesan. Serve immediately, while hot.
