#### Ingredients


- **Cooked Rice**: 3 cups (preferably day-old, cooled)

- **Cooking Oil**: 3 tablespoons (vegetable or sesame oil)

- **Garlic**: 2 cloves, minced

- **Ginger**: 1 teaspoon, grated

- **Carrot**: 1 medium, diced

- **Red Bell Pepper**: 1 medium, diced

- **Green Onions**: 4, sliced (separate white and green parts)

- **Frozen Peas**: 1 cup

- **Soy Sauce**: 3 tablespoons (adjust to taste)

- **Toasted Sesame Oil**: 1 tablespoon (optional)

- **Eggs**: 2 large (optional for added protein)

- **Salt and Pepper**: to taste

- **Red Pepper Flakes**: ½ teaspoon (optional, for heat)


#### Instructions


1. **Prepare Ingredients**:

   - If using day-old rice, ensure it is cold and separated. Chop all vegetables and set aside.


2. **Cook the Eggs (Optional)**:

   - In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Add the whisked eggs and scramble until fully cooked. Remove from the pan and set aside.


3. **Sauté Vegetables**:

   - In the same skillet, add the remaining oil. Increase the heat to medium-high. Add the minced garlic and ginger; sauté for about 30 seconds until fragrant.

   - Add the diced carrot and bell pepper. Stir-fry for about 2–3 minutes until they start to soften.

   - Add the white parts of the green onions and frozen peas; stir-fry for another minute.


4. **Add Rice and Seasoning**:

   - Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.

   - Pour in the soy sauce and sesame oil (if using). Stir everything together, ensuring the rice is evenly coated with the sauce.


5. **Combine Everything**:

   - If you cooked eggs earlier, add them back into the skillet now. Mix everything thoroughly.

   - Season with salt, pepper, and red pepper flakes if desired. Stir-fry for another minute or two until heated through.


6. **Serve**:

   - Remove from heat and garnish with the green parts of the sliced green onions.

   - Serve hot as a main dish or a side.
