## Ingredients


### For the Korma

- **4 cups mixed vegetables** (e.g., peas, carrots, green beans, cauliflower, bell peppers)

- **2 cups potatoes**, diced

- **2 tablespoons ghee** (or oil)

- **½ teaspoon cumin seeds**

- **2 medium onions**, roughly chopped

- **4 cloves garlic**, minced

- **2-inch piece ginger**, minced

- **1–2 green chilies** (adjust to taste)

- **1 large tomato**, chopped

- **1 teaspoon salt**

- **1 teaspoon coriander powder**

- **1 teaspoon paprika**

- **½ teaspoon Kashmiri chili powder** (or regular chili powder)

- **½ teaspoon turmeric powder**

- **½ teaspoon garam masala**

- **¼ teaspoon cardamom powder**

- **½ cup cashews**, soaked in warm water

- **1 ½ cups water**

  

### For Garnishing

- **½ cup coconut cream** (optional)

- **1 tablespoon kasuri methi** (dried fenugreek leaves)

- **Golden raisins and additional cashews**, for topping

- **Fresh cilantro**, chopped


## Instructions


### Step 1: Prepare the Vegetables

1. In a large pot, bring water to a boil and add the diced potatoes. Cover and cook for about 5 minutes.

2. Add the mixed vegetables to the pot and cover again. Cook for an additional 5 minutes until just tender. Drain and set aside.


### Step 2: Make the Korma Base

1. In a large pan, heat ghee over medium heat. Add cumin seeds and let them crackle.

2. Add chopped onions and sauté until they are golden brown.

3. Stir in minced garlic, ginger, and green chilies; cook for another minute until fragrant.

4. Add chopped tomatoes and cook until soft.

5. Mix in the salt, coriander powder, paprika, Kashmiri chili powder, turmeric, garam masala, and cardamom powder. Cook for 2–3 minutes.


### Step 3: Blend the Sauce

1. Allow the mixture to cool slightly before transferring it to a blender.

2. Add the soaked cashews and 1 ½ cups of water to the blender. Blend until smooth.


### Step 4: Combine Everything

1. Pour the blended sauce back into the pan over low heat.

2. Add the cooked vegetables and stir well to combine.

3. If using coconut cream, stir it in now along with kasuri methi.


### Step 5: Finishing Touches

1. In a small pan, heat a bit of ghee and lightly fry golden raisins and cashews until golden.

2. Top the korma with this mixture along with chopped cilantro.
