### Chicken Souvlaki Recipe


Chicken Souvlaki is a popular Greek dish featuring marinated chicken skewers grilled to perfection. This recipe is simple and perfect for summer grilling, served with pita and tzatziki sauce.


#### Ingredients


**For the Marinade:**

- **4 boneless, skinless chicken breasts** (about 1 kg or 2.2 lbs), cut into 1-inch cubes

- **1/4 cup olive oil**

- **Juice of 1 lemon**

- **3 cloves garlic**, minced

- **2 tablespoons dried oregano**

- **Salt and pepper to taste**


**For Serving:**

- **Pita bread or flatbreads**

- **Tzatziki sauce** (store-bought or homemade)

- **Fresh vegetables** (like lettuce, tomatoes, and onions)


#### Instructions


1. **Prepare the Marinade:**

   - In a large mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk until well combined.


2. **Marinate the Chicken:**

   - Add the cubed chicken to the marinade and mix well to ensure all pieces are coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably up to 2 hours for better flavor.


3. **Thread the Chicken:**

   - Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.

   - Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.


4. **Grill the Souvlaki:**

   - Once the grill is hot, place the skewers on it. Grill for about 8-10 minutes, turning occasionally until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F or 75°C).


5. **Serve:**

   - Remove the skewers from the grill and let them rest for a few minutes. Serve the chicken souvlaki with warm pita bread, tzatziki sauce, and fresh vegetables.


### Tzatziki Sauce (Optional)


**Ingredients:**

- **1 cup plain Greek yogurt**

- **1/2 cucumber**, grated and excess water squeezed out

- **1 clove garlic**, minced

- **1 tablespoon olive oil**

- **1 tablespoon lemon juice**

- **Salt and pepper to taste**


**Instructions:**

1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper.

2. Mix well and refrigerate for at least 30 minutes before serving to allow flavors to meld.
