### Kachori Recipe


Kachori is a popular Indian snack made with a spiced filling, typically of lentils or peas, encased in a crispy dough. Here’s a simple recipe for making **Khasta Kachori** (crispy kachori) using moong dal.


#### Ingredients


**For the Dough:**

- **1 cup all-purpose flour (maida)**

- **1 tablespoon oil**

- **1/2 teaspoon salt**

- **Water (as needed)**


**For the Filling:**

- **1 cup moong dal (split yellow lentils), soaked for at least 3 hours**

- **2 tablespoons gram flour (besan)**

- **1 tablespoon cumin seeds**

- **1 tablespoon fennel seeds (saunf)**

- **1/2 teaspoon red chili powder**

- **1/2 teaspoon turmeric powder**

- **1/2 teaspoon dried mango powder (amchur)**

- **A pinch of asafoetida (hing)**

- **Salt to taste**

- **Oil for frying**


#### Instructions


1. **Prepare the Dough:**

   - In a mixing bowl, combine all-purpose flour, salt, and oil. Mix well.

   - Gradually add water to form a smooth and stiff dough. Cover it with a damp cloth and let it rest for about 30 minutes.


2. **Prepare the Filling:**

   - Drain the soaked moong dal and grind it coarsely in a blender. Do not make it into a fine paste.

   - In a pan, heat a little oil and add cumin seeds, fennel seeds, and asafoetida. Sauté for a few seconds until fragrant.

   - Add the ground moong dal along with red chili powder, turmeric powder, dried mango powder, and salt. Mix well and cook on low heat until the mixture is dry and aromatic. This should take about 5-7 minutes.

   - Allow the filling to cool down completely.


3. **Assemble the Kachoris:**

   - Divide the dough into small balls (about the size of a golf ball).

   - Flatten each ball into a small disc using your palms. Place about 1 tablespoon of the filling in the center.

   - Carefully fold the edges over the filling to seal it completely, pinching to ensure there are no openings.

   - Gently flatten the filled ball again to form a patty.


4. **Fry the Kachoris:**

   - Heat oil in a deep frying pan over medium heat.

   - Once hot, carefully slide in the kachoris one by one, making sure not to overcrowd the pan.

   - Fry them until they puff up and turn golden brown on both sides. This should take about 4-5 minutes per batch.

   - Remove them with a slotted spoon and drain excess oil on paper towels.


5. **Serve:**

   - Serve hot with green chutney or tamarind chutney for dipping.
